Exposure: Sud Ovest
Terroir: with good bone, poor in clay.
Type of growing: Simple Guyot
Density: 3800-5500 plants / hectar.
Harvest: End of september-beginning of october hand harvest in boxes with the selection of grapes.
Wine Making: Alcoholic fermentation occurs under controlled temperature of about 28-30 degrees Celsius in stainless steel vats, while the maleolactic fermentation occurs in wood (barriques) 50% french wood-50% american wood, where wine remains up to bottling. After a slight clarification with egg whites, wine is bottled without filtering at the end of april.
To make a Sangiovese/Cabernet Sauvignon that could compete, we began by looking for fruit grown primarily in soils with high water drainage and little topsoil. This type of soil produces intense fruit that translates into aromatic and complex wines. We keep each individual vineyard lot separate through the fermentation process. The lots are evaluated and blended. The bright fruit and forward nature of our Micante is a very satisfactory result for our best target wines.
